Mango filled crumbled cake


Ingredients
2 1/2 cups ripe mangoes (small chunks) 2-3 mangoes
3-5 tbsp granulated sugar
1/2 tbsp corn starch
2 cups flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup cold unsalted butter
2/3 cup brown sugar
1/2 tsp vanilla extract
Method
Pre-heat oven to 350 degrees F.
Cut mangoes into small chunks. In a bowl, combine mango chunks, sugar (use more if mango is not ripened) and corn starch. Mix well and set aside.
In a large bowl, combine flour, baking powder and salt.
Cut cold (important: make sure it is cold!) unsalted butter into chunks and add to flour mixture.
If using a food processor, pulse until small crumbs are formed. If using a pastry cutter, cut butter into flour mixture until small crumbs are formed.
Mix together wet ingredients – brown sugar, and vanilla extract
Then add wet ingredients into buttery dry mixture. Mix well – mixture should be slightly crumbly.
Bring ~2/3 of crumbly mixture to the bottom of a 8″ x 8″ baking pan lined with parchment paper. Press mixture onto pan to form a layer of crumb pastry.
Add mango mixture, and spread it out evenly.
Then sprinkle the top with the rest of the crumbles.
Bake in the oven for 35-40 minutes.

Chocolate fudge Top-up with dessicated coconut


 

If we want something quick this  this fudge is the solution.
This fudge has an extremely simple with few ingredients, procedure and all it requires is a little bit of patience.
Coconut top makes it divine.



Ingredients
Dark chocolate-1cup
Unsalted butter-2tbls
Condensed milk-175mg
Dry milk-1tbls
Top
2-3tblsCondensed milk-

1/2cup desiccated coconut

1/4cup dried walnut crused

1/4 cups almond crushed

Instructions

Grease your pan with butter and line it with parchment paper with handles on two sides. Set this aside.
Set a double boiler and melt your chocolate while stirring it occasionally. Once all chunks are melted, take it off the heat.
In the same bowl add in condensed milk and melted butter. Combine everything really well. You will soon have a thick mixture.
Pour in all the fudge mixture into your prepared pan. 
Coconut top
Combine remaining condensed milk, almond,,walnuts and coconut in a bowl.
Spread over chocolate base and then sprinkle with extra coconut. 
Refrigerate this for 3-4 hour or until completely set.
Cut into desired shape and enjoy

Cheese Chilli Suji Dhokla

Ingredients

2 cups  rawa

1 tsp Salt

1 tsp Sugar

1 tbsp of Oil

2 cups Yogurt

1 cup Water

3 tsps 10 gms Eno fruit salt

1 cup grated Cheddar

1 tbsp chopped green Chilli


Tadka

2 tbsps Mustard oil

4 regular dried red chillies

1/2 tsp black Mustard seeds

1/2 tsp Cumin seeds


10 – 15 Curry leaves


Add the salt, sugar and oil to the  MTR idli rawa 

Follow with the yogurt and mix it well

Add half the water and get your instant pot and baking pan prepped and ready, add the rest of the water, mix 

Add half the batter to the cake pan and spread quickly and evenly

Cover the surface with cheese and green chilli

Add the second half of the batter and cover

Add a cup of water to the Instant Pot and place the pan on top of the jali

Cover the pot and set to sealing

Alloo Zarda





Ingredients
Alloo zarda
Ingredients..
-1potatoes-2
2-sugar2tbsp
3-caradomn powder-1/8tsp

-4dry fruits almond raisins kaju-1tbsp
Vark optional
Desi ghee-1tsp
Method
Peel potatoes and grate it in water. Wash again.
Take bowl with water add pinch of yellow color in it.
Microwave for 3minutes.drain the water spread on muslin cloth so absorbed all water
Heat pan add ghee and sugar .caramalised the sugar but not brown it.add boiled grated potoes to it.add cardamon powder
Dry the watering any
Add dry fruits
Garnish with almond and vark

Tofu curry



Tofu Curry


 Ingredients

Tofh-200gm

Onion-2

Almond-6-7

Garlic-3-4cloves

Ginger grated-1/2tsp

Tomato puree-1/2cup

Red chilli powder-1/2tsp

Tejpata1

Haldi1tsp 

Garam masala-1/2tsp

Varhadi masala2tsp

Kasuri methi-1tbls

Cream-1tbls

Salt to taste

Oil

Method

Cut onion in big size.add onion,garlic and peeled almond in water and boiled on slow fire till onion is soft.

Grind to smooth paste.

Heat oil in a pan add tejpatta.add onion paste and grated ginger.fry for a minute.add all dry masalas and fry again.

Add tomato puree fry till oil leaves sides.

Add tofu pieces.add water.add cream also.

Boil then add kasoori methi.and cook for 10 minutes with cover.
