Mix veg in milk gravey.....blog hop wednesday

This is the 5th week of hop blog Wednesday started by Radhika This week i am paired with Laxmi of samayal diary.there are many recipes appeal me but bec i have all the ingredients available and it looks different and healthy. Laxmi has  fabulous recipes of south with others also .So visit her blog and enjoy the taste of south with innovative recipes


Ingredients
mixed veggies(carrot cauliflower beans potatoes)-1cup
tomato-1 small

onion-1 small
turmeric powder-1/4 tsp

red chili powder-1/4 tsp

coriander powder-1/2 tsp
garam masala-1/4 tsp
zerra ,cloves.aniseed-1/4 ts
salt to taste

maida-1/2 tsp

milk -1cup

butter-1tsp



To grind

tomato-1

Ingredients

coriander powder-1/2 tsp
garam masala-1/4 tsp
zerra ,cloves.aniseed-1/4 ts
salt to taste

maida-1/2 tsp

milk -1cup

butter-1tsp




Method

Here i make some changes i do not add peas but cauliflower and Potato.i make thin white sauce with milk and maidato.I make thick gravy the result is fabulous.


Cut veggies and boil with little water and salt.keep aside. cut onion and tomato in 4pieces. heat oil and fry onion. when transplant add tomato fry till skin of tomato comes out. cool it. grind it.


Now heat oil and add zeera cloves and Annie seeds when splutter add grind onion .when it become brown add ginger garlic paste.after fry sometime add all the dry masalas.Add fry onion&tomato paste fry it .Now add all the boiled veggies and mix well.Add white sauce and mix again.cover it for 5-6 minutes. add gram masala and switch off gas garnish with coriander leaves

Yummy veggie is ready to eat.

Mattar chat


As we know mattar is legumes and rich in protein.this chat is fast food but it is fat free only boiled and not much cooking it is just like a healthy salad.
ingredients
white dry mattar-250gm
onion -1 chopped
tomato -1 chopped
green chili-2
zeera-1/2 tsp
coriander powder-1/2 tsp
amchoor powder-1/2 tsp
gram masala-1/4 tsp
red chili powder -1/4 tsp optional
coriander leaves
oil 2tbsp
salt to taste

Method
soak mattar for 5-6 hours. boil it in presser cooker for 7-8 minutes and keep it as it is when pressure realese then open the lid of cooker.Heat oil in a pan add zeera when splutter add all the dry masalas. fry for 2-3 minutes then add the mattar and mix well. cover it for 5 minutes
.sprinkle onion green chili and tomato over it when it is served. garnish with coriander leaves.

Basen burfi



It is easy to make with very less ingredients. i like this burfi very much . its special aroma appeal me i think u will also enjoy its taste .so try .
Ingredients
basen-1cup
ghee or oil-3/4 cup
sugar-3/4 cup
rawa suji-1tbsp
water 1/4 cup
silver vark

Method
heat oil in a pan .add basen and suji and fry till the aroma is coming.or oil leaves the sides.keep aside.Take water in a pan and boil add sugar and make one thread syrup.add fried basen into the syrup and whisk constantly when all the basen is gathered immediately spread on the greased thali. when little cool cut into pieces as ur desire

Stuffed Paniharam



Ihave some leftover of idly batter and thinking of its use in another way. the idea to make mapaniharam came to my mind as i saw it in many blogs. before this i never tried .I add  onion green chili,ginger and coriander leaves in the batter. .Rresult is super so try it. I think it is very easy recipe and simple so anyone can cook.
Ingredients
idli batter-1cup
onion-1 chopped finely
green chili-1 chopped
ginger-small piece grated
coriander leaves-chopped
salt to taste
oil for fry


Add all the ingredients in idli batter and mix well.Heat the non stick pan of paniharam making.Add very little oil in every space when hot pour batter which cover 3/4.never fill full otherwise batter will overflow. when one side become golden brown fry other side.
Eat with coconut chutney!!!!!

Curd / Thayir vadai.... blog hop wednesday


This the 4th week of BLOG HOP WEDNESDAY started by Radhika.enjoy to make  other's blog recipes,This week i paired with Mehjabeen of jabeen's corner.-she has wonderful blog with delicious recipes . she recently organised a event -IFTAR-received many innovative and tasty dishes. one event is also going on his blog .so do participate in it.I chose this recipe and make some variation . i used tamarind sweet chutney in place of tempering. so it resemble the dahi vada used in north. so happy to combined the north and south.
There is one suggestion that every blogger who takes part in this event must see and comment on each others blog ,it is the main purpose of the event.or at least paired persons should comment on the blog so that we came to know how her dish is prepared.

Ingrdients
urd dal--1cup
moong dal-1/4 cup
curd-3cups
green chili-1ginger-1"
coriander leaves
cumin seeds-2tsp roasted
red chili powder-1tsp
black salt -pinch of
oil for fry

Method
Soak both dals for 5 -6 hours i took moong dal instead of rice'.Grind it with green chili in  fine paste. add ginger and coriander leaves.whisk the batter so it becomes light.as light ur batter the vada will be soft. take water in a bowl and add salt to it . keep aside Heat oil  in a pan .take one tsp batter and flatten on the palm and fry in slow fire and dip in the salted water.When become soft dip in the curd already whisked and add the salt.now it is ready to serve. I here do the variation as Jabeen tempered it but i take vada and sprinkle chili powder and roasted cumminseeds powder.pour some tamarind sweet chutney .

Cooking is a passion for many of us, but there is something special about Delhi based, Santosh Bangar who dishes out some really simple, easy to prepare and light on the tummy food, that is sure to bring a smile across our faces.

She started her food blog ‘Santosh’s Kitchen’ just a year ago, and already enjoys a huge popularity from around the world and has a fan following of 272 members who avidly follow her food blog on easy to make, home cooked food.



A lawyer by profession, Santosh Bangar has always been interested in cooking from her childhood days.”My mother was a great cook and used to experiment with a lot of dishes. Everyone used to love her food and this inspired me too,” remembers Santosh. Some of her mother’s favourite dishes that she fondly remembers are Zarda (Sweet Rice), Onion parathas, Kabuli chana, Rajma, Pathod (arabi ke patte ke pakode).

How did it all begin?

Right after she got married, Santosh and her husband shifted to Raebareli, near Lucknow and lived in a cozy colony with 100 families from various parts of the country. “We used to have frequent family gatherings consisting of potluck style parties, that gave us a chance to show-case our culinary skills,” quips Santosh.

She further adds, “Everyone loved the food prepared by me. I also got a chance to learn recipes from my friends belonging to different states of the country. After a short stint of practicing law, I decided to be a home maker and enjoyed cooking different styles of dishes for my family and friends.”

The first dish that Santosh made was Kabuli Chana under the guidance of her mother for her family. The dish was admired by all and with that started a new culinary journey.

How did the blog ‘Santosh’s Kitchen start?


“In today’s fast paced world, I see my children having no time to cook due to hectic office hours. So I decided to start a blog especially for this purpose to promote simple and easy cooking without compromising on taste and nutrition. I experimented on how a dish can be simple, yet tasty,” says Santosh.

She started her blog around a year back and was inspired by her daughter’s sister-in-law Shanthi Krishna Kumar who was visiting her daughter at that time. It was she who helped Santosh come up with this food blog. She was not aware that one could create food blogs earlier. When she came to know about Shanthi’s cooking blog, she says, “I instantly felt that I should also start something like this to showcase my passion for cooking and to reach wider audience.”

She further adds, “My main objective of this food blog is to inspire the young generation to not consider cooking as a burden, but to love it and also find a way to be healthy. There is a trend of fast food, which causes health problems as we all know, but our kids still stick to it either due to either negligence or laziness.”

How does she come up with simple and tasty cooking?

She sincerely feels that the priority of good and healthy food still exists in this world. Since people are more health conscience, this acted as a catalyst to start a food blog which can help others to fulfill their sense of taste and meet their health requirements.


Inspiration

Santosh regularly watches cookery shows and also surfs several food blogs and then experiments with new dishes and tries to come up with her own versions. Some of her favourite and most interesting recipes are Dal-Baati ,choley bhature, corn cake, vegetarian egg, eggless dates and walnut cake.


Memories of Food


One of the few things that she notices fast disappearing from the daily household kitchen are:

i) Chutneys ground on stone or the traditional pestle and mortar which give a totally different taste than masalas ground in an electric blender.


ii) Homemade sweets and biscuits that were not pretty to look at like commercial ones, but were tastier and healthy.

iii) Homemade chips and papad that have been replaced with processed ones.

iv) Homemade snacks have been replace with junk food.

v) Homemade drinks which were fizz and chemical free.

On asking her how does she feel on having more than 200 fans following her food blog, Santosh replies, “It feels great to be recognized by everyone as it gives a sense of achievement and belonging. It also inspires me to try and experiment new recipes and share with my friends online.”

What are the five most important tips while preparing a dish?

Santosh shares five important tips for personalizing your cuisine:


i) A dish should be prepared keeping in mind the likes and dislikes of your guests.


ii) Always taste the dish for salt, sugar and spice before and adjust if required.


iii) The appearance and presentation of a dish is as important as the taste.

iv) Prepare food with love (very important); it shows.

v) Prepare a little extra quantity than required, to avoid embarrassment of its shortage during a party.
